Chef Thomas Millar has been working with us for the last 9 years. An excellent chef who has transformed the reputation of Gigi’s due his skills, consistency, commitment, dedication and hard work.
Prior to his arrival he built up his career with over 20 years experience in Edinburgh’s most renowned eateries.
Starting his career at only 15 years old, Thomas started working in La Scala Restaurant in Edinburgh. He spent night times working in the restaurant and went to college during the day for 2 years to earn his City & Guilds 1 & 2.
Working his way through the ranks and achieving Head Chef status after 4 years in Ponte Vecchio restaurant, Thomas was clearly passionate in his career path till he accepted the opportunity in owning his own restaurant named Pinocchio’s.
4 years went buy till Chef Millar decided to step back from the ownership front and dedicate his work to what he loved most – to be in the kitchen.
Through long spells at La Piazza restaurant and Guiliano’s, gaining 23 years and invaluable Italian restaurant experience by this point.
Chef Millar finally moved to Gigi’s in June of 2011 and been a driving force since. Constantly innovating and adjusting our menu to improve with the freshest local produce and ingredients.
